I don't remember when I fell in love with Chilly Paneer. Maybe it happened in parts but now I am so obsessed with it that whenever I go home, it's the first thing on my agenda. I like to munch it down with some masala noodles. Nom nom nom, the creaving is beginning yet again. This is how I do it-
First, the Masala Noodles-
So you are going to need-
- About 500g of Noodles
- 2 onions, medium sized
- ginger- 1 piece
- 3-4 garlic splines
- Sauces
- Oil
- Vinegar
Buy some thin noodles of superior quality, not the average
noodle that you get at your local shops. That noodle smells badly of maida
flour and is so thick that it ruims the flavor of the noodle if you are going
to serve it with Chilly Paneer. In other cases, I wouldn’t stress this so much.
Buy some good noodles online if you want (any good brand, I don’t discriminate
when it comes to good things). I know it might be a bit more expensive but it

Now, taken that the right noodles have been bought, boil the
noodles in salted water. Drain the water and run cold water over it. Toss the
noodles well at keep it sort of spread so they don’t stick. If it’s a good
brand, they wouldn’t anyway.
Next, Heat some oil in a frying pan or wok over a high flame.
Add crushed ginger, garlic and chopped onions. Let the contents fry till the
onion turns light burn and gives off a nice smell. Keep stirring the contents
all the while. Add the noodles, soy sauce, red chili sauce, white pepper
powder, salt and vinegar. Keep on stirring the contents and then cover with a
lid. After 3-4 minutes, remove the lid and do the seasoning with coriander
leaves.
Next comes the big one- Chilly paneer. You are going to need-
Paneer (150 grams)
- 2Capsicum (Cut into medium sized)
- Corn flour - 3-4 tbsp
- 1 onion chopped long
- 4 finely chopped garlic Kali
- Tomato Sauce
- Oil
- Vinegar
- Sauces
- Green pepper
- Ginger - 1 piece
- Azino Moto - 1 2 Pinch
Cut paneer into square pieces. Spread corn flour and Maida
flour in a ratio 3:1 on a plate and form a batter. Cover the pieces of Paneer
wrapping it into the batter. Now,take oil in a pan, let it heat a bit and fry
the pieces of Paneer on medium flame. Make sure to turn the pieces upside down
in the oil to let the oil get soaked on either side and take it out when the
colour turns light brown.
Now fry the onion in olive oil till it turns light brown.
Add garlic, ginger and green chili. Mix the contents thoroughly. Now add the
roasted pieces of paneer, add tomato puree , soy sauce, chilli sauce, vinegar, chilli
flakes, pepper, salt and Ajinomoto. Mix the spices well multiple times in the
wok.
Now, prepare another puree of Courn flour, this time only
with courn flour and add it to the above mixture. Keep stirring to avoid the
formation of any lumps. When all this is done and the mups have disappeared,
cover with a lid and let it cook for 5-8 minutes. Then remove the lid, do some
seasoning with green coriander leaves and serve it with your lovely plate of
noodles.
