The truths that stood two hundred years earlier do not anymore and the truths that stand today will not two hundred years from now. We learn from History that we do not learn anything from history. There can only be two explanations for this- Either we are all too right in doing so or we are entirely flawed in our actions. Whichever it is, doing so has changed the human existence for better.

If the generations before us had really discovered the true meaning of life, they would not have documented it anywhere. There can be multiple reasons to know this to be true. Just as Freud withdrew himself to the Alps after understanding the basic essence of humanity, the enlightened souls of the yesteryear knew very well that if they really let out the ball, the secret that keeps human species moving forward, it would result in sheer chaos and calamity for their coming generations. That said, there can't be any physical document passed on from generations to generations which contains in it the secrets of the cosmos, the source of this cosmic manifestation and the deep dark secret of life. I call it dark because it's hard to imagine something that's bleak even in shreds containing something bright and optimistic.

Going by my above theory, there is nothing that we can look forward to and circulate amongst the whole human race which will ultimately lead to a better life for the species. If you look closely, there are examples of documents in real life that are attempts at decoding life and are extensively circulated in the name of being the word of the ages. It's our belief in them that makes those documents valuable and pristine. So is it really those books, those juggeleries of words that we may find in an old book or a letter that can define life for us. I don't think so. Even if they did, I choose not to believe so. I choose to believe that every generation on this planet needs to earn it's own secrets; I choose to believe that when we really learn those secrets, we will choose not to pass them on. I choose to believe in the knowledge that my previous generations possessed and not in the beliefs that it held.

So, if I were to find one fine day an old old letter and an ancient book that has the words "The secrets of life lie within" in bold solid fonts on it, I would burn them the minute I find them.

I don't remember when I fell in love with Chilly Paneer. Maybe it happened in parts but now I am so obsessed with it that whenever I go home, it's the first thing on my agenda. I like to munch it down with some masala noodles. Nom nom nom, the creaving is beginning yet again. This is how I do it-



First, the Masala Noodles-
So you are going to need-
  • About 500g of Noodles
  • 2 onions, medium sized
  • ginger- 1 piece
  • 3-4 garlic splines
  • Sauces
  • Oil
  • Vinegar


Buy some thin noodles of superior quality, not the average noodle that you get at your local shops. That noodle smells badly of maida flour and is so thick that it ruims the flavor of the noodle if you are going to serve it with Chilly Paneer. In other cases, I wouldn’t stress this so much. Buy some good noodles online if you want (any good brand, I don’t discriminate when it comes to good things). I know it might be a bit more expensive but it would be worth it. Trust me. Now, taken that the right noodles have been bought, boil the noodles in salted water. Drain the water and run cold water over it. Toss the noodles well at keep it sort of spread so they don’t stick. If it’s a good brand, they wouldn’t anyway.
Next, Heat some oil in a frying pan or wok over a high flame. Add crushed ginger, garlic and chopped onions. Let the contents fry till the onion turns light burn and gives off a nice smell. Keep stirring the contents all the while. Add the noodles, soy sauce, red chili sauce, white pepper powder, salt and vinegar. Keep on stirring the contents and then cover with a lid. After 3-4 minutes, remove the lid and do the seasoning with coriander leaves.

Next comes the big one- Chilly paneer. You are going to need-
Paneer (150 grams)
  •  2Capsicum  (Cut into medium sized)
  •  Corn flour - 3-4 tbsp
  •  1 onion chopped long
  •  4 finely chopped garlic Kali
  •  Tomato Sauce
  •  Oil
  •  Vinegar
  •  Sauces
  •  Green pepper
  •  Ginger - 1 piece
  •  Azino Moto - 1 2 Pinch


Cut paneer into square pieces. Spread corn flour and Maida flour in a ratio 3:1 on a plate and form a batter. Cover the pieces of Paneer wrapping it into the batter. Now,take oil in a pan, let it heat a bit and fry the pieces of Paneer on medium flame. Make sure to turn the pieces upside down in the oil to let the oil get soaked on either side and take it out when the colour turns light brown.
Now fry the onion in olive oil till it turns light brown. Add garlic, ginger and green chili. Mix the contents thoroughly. Now add the roasted pieces of paneer, add tomato puree , soy sauce, chilli sauce, vinegar, chilli flakes, pepper, salt and Ajinomoto. Mix the spices well multiple times in the wok.

Now, prepare another puree of Courn flour, this time only with courn flour and add it to the above mixture. Keep stirring to avoid the formation of any lumps. When all this is done and the mups have disappeared, cover with a lid and let it cook for 5-8 minutes. Then remove the lid, do some seasoning with green coriander leaves and serve it with your lovely plate of noodles.

I am one of those criminal people who live to eat. And so, I have made it a point to learn to cook all the things that I like and today I am sharing the recipe of the heartiest dinner I love- Veg Manchurian with Chinese fried rice.

First the Rice- 

Take a small bowl of long, fine quality rice. Wash it and pour a tablespoon of oil and salt it. Put it on the gas in a cooker and bring to a boil. When the rice is cooked just enough that there is no matter and it is not too soft, take it off the gas and let it be exposed to some air for a bit.
Peel and chop two onions onion lengthwise. Next, put all the chopped vegetables you would like to put in like beans, capsicum, carrot in a different bowl. I personally don’t like putting in the carrot as it adds a sweet tinge to the rice which I don’t like. You make do so at your convenience.
Next, heat a pan add some oil and fry the chopped onions for 2-3 minutes. Then put in the chopped mixed vegetables and roast the contents on high heat for 3-4 minutes. It’s better to put on a plate on the contents if you don’t like the vegetables too raw. After this, add cooked rice, salt, soy sauce, vinegar and black pepper powder to the vegetables. Give a good mix and fry for 1-2 minutes, then switch off the gas.

Fried rice is ready. Next comes the trickier part. Veg Manchurian.

Chop vegetables like cauliflower, carrot, cabbage very fine and then put them in water to boil. Add some salt to the water. Take the vegetables out of the pan by filtering the water through a sieve. Make s sure to drain all the water. This way, the vegetables for your Manchurian balls are dehydrated. Now take these boiled vegetables in a big bowl, add chopped green pepper, black pepper, corn flour, maida flour, soy sauce, ginger, green coriander and salt, mix well. Whatever water is left in the veggies permits the batter to make small balls. Make Manchurian balls of the whole thing and keep them at some distance apart on a plate. You may use edible colour for a good look at your own expense.
Pour oil in a pan and heat it. Next put Manchurian balls, 5-6 at a time into the oil and deep fry them until they turn golden brown. Finally, put all the fried balls in a separate plate. Since we are ready with the balls, it’s time to prepare the sauce. If you feel like getting things done quickly, you can prepare the sauce simultaneously with the balls although it would require two pans or woks.
 Again, add some oil to a wok and bring it to heat. Add chopped onions to the oil and fry it until dark pink. Preferably, add tomato puree to it. At the same time, prepare another batter for the gravy with Corn flour and Maida in a 3:1 ratio and mix enough water to it as to not work quick loops. Now add this mixture to the onions in the wok and mix well till the lumps are dissolved. Add spices as desired into this gravy like chilly powder, pepper etc. Add salt to the boiling mixture. Now once the red colour begins to kick in, add chilly sauce and soy sauce to the mixture. Let it fry for some time. If the water looks less according to the rice you have prepared, you may add some hot water to it but not much. Now, add the Manchurain balls to the sauce and cover the contents with a lid. Let the spices do their work for say 3 minutes and then unlid to carry out the seasoning.  Green Coriander leaves freshly chopped will do the trick.
Serve your Veg. Manchurian along with the Chinese Fried rice and have a hearty meal.
